Don’t tell me it’s not sunny where you are and if it is I’m sorry to hear that.
My day so far was made of iced cola with a slice of lemon. It’s full of calories I know and I couldn’t care less.
My friend Yanka makes this soup that’s refreshing and doesn’t make you fell bad. It’s called Tarator and it’s a very popular cold soup in Eastern Europe. It’s dead simple to make, nice to drink and so appropriate when it’s hot and sunny (I know I’ve said it already…). This is also very light, so light I have submitted it for the food recipe contest: Les saveurs sans calories.
Tarator soup:
– 1 cucumber
– 250g Greek yoghurt
– 50 ml water
– 1 clove of garlic
– 1 tbsp. olive oil
– 2 tsp. chopped dill
– 5 walnuts
– Salt
Peel the cucumber then grate it thinly. Put in a bowl and add all the ingredients. Mix together and add salt.
Done!

Such a simple yet lovely soup. Refreshing!
