Phew, I thought I had lost my game since the first video “the Kougelhopf” was published a month ago. But I am back today with the second one: the Aioli animation.
I know some girls who’d rather stand clear of this garlic-loaded mayonnaise but I would say you are really missing on something.
I can’t get enough of it and as you will see for yourself it’s really easy to prepare.
You can add some twist and flavours by incorporating almonds to it. Simply gorgeous with roast chicken, rabbit or grilled fish.
– 2 egg yolks
– 1 tsp. mustard
– 8 cloves garlic
– 30cl olive oil
– 1tbsp lemon juice
In a bowl mix together the eggs, mustard and crushed garlic.
Drizzle in the olive oil slowly while whisking up like you would do for a mayonnaise.
Once the preparation has thickened, add the lemon juice and season to your taste.
Place in the fridge until ready to eat.
On an oven tray, spread 50 g of blanched almonds. Toast for 20 minutes at 150°C. Let them cool down then crush them. Add to the aioli.
The next animation will be spooky and freaky, I won’t say anymore…
