Victoria sponge is one of my favourite cakes from England. I enjoy making it as individual portions, so I can eat them one after the other… huhuhuh
The
recipe below offers some variety to the original. I made my sponge
lighter following Mayako’s technique. I also incorporated
some Matcha tea because green is the colour of spring!
